Nobu Hong Kong occupies a glamorous second-floor position in the Regent, where the Victoria Harbour and Central skyline do much of the opening act. The room is refined and atmospheric, especially around dusk, and diners repeatedly describe the view as memorable; one synthesized sentiment captures the mood as “the skyline was the highlight before the first course arrived.” Service is usually warm and polished, though the kitchen’s timing can swing from frustratingly slow to almost rushed.
