Juste is a lively Paris seafood spot that can be genuinely excellent for oysters, shellfish platters, and simple bistro-style seafood, but consistency and service can swing hard enough that it’s worth booking with eyes open.

The verdict

Juste excels at what it does—fresh oysters, razor clams, and well-composed platters at fair prices make it competitive with Paris's better neighborhood seafood spots. However, quality swings between excellent and disappointing across visits, and multiple food safety complaints create legitimate concern that tempers enthusiasm. The pleasant terrace location and warm but uneven service round out a solid but unreliable experience.

One caveat: Some diners had excellent meals while others found the same shellfish dry, sandy, or underwhelming, so consistency is uneven.
